Slow Cooker Vegetable Broth

Cook Time: 10-12 hours

Ingredients

Assorted vegetable scraps (such as mushroom stalks, carrot peels, the dark green part of leeks, beet greens, etc.); enough to fill slow cooker ¾ full

1 Bay leaf

Direction

  1. Place vegetable scraps and bay leaf into slow cooker. Cover with water.

  2. Cook on LOW for 10-12 hours. Let cool.

  3. Strain liquid and store in mason jars or containers.
