No-Roll Sushi Bites

Ingredients

  • 1 ½ Cups (180 mL) Sushi rice, cooked

  • 2 Tbsp (30 mL) Rice vinegar

  • 3 sheets Nori

  • 1 Cucumber

  • 3 Tbsp (45 mL) pickled radish

  • 1 Avocado

  • Soy sauce, for serving

  • Optional for serving: toasted sesame seeds, pickled ginger

Spicy Tuna Ingredients (Optional):

  • 1 can (120g) Tuna, drained

  • 1 Tbsp (15 mL) Chili sauce

  • 1/2 tsp (3 mL) Rice vinegar

  • 1 ½ Tbsp (22 mL) Mayonnaise

  • 2 Tbsp (30mL) Green onions, finely chopped

Directions

  1. Cook sushi rice as per package.

  2. Pour the rice vinegar evenly over the cooked rice and toss gently to distribute.

  3. Finely dice cucumber, radish and avocado. Set aside.

  4. If using, make the spicy tuna by adding all the ingredients into a bowl and mixing thoroughly.

  5. Cut nori sheets into four equal-sized pieces. Add 1 piece of nori sheet to each of the 12 muffin cups.

  6. Atop the nori, gently pack a small amount of seasoned rice into each cup, leaving a small indent in the centre.

  7. Add cucumber, radish, and avocado to each cup, spreading evenly so there is enough for all 12. Sprinkle with sesame seeds if using and gently remove each sushi piece. Serve with soy sauce and pickled ginger, if using.
