Peaches and Oat Bars

 Ingredients

2 Cups (500 mL) Old fashioned rolled oats

1 ½ tsp (7.25 mL) Cinnamon, ground

1 tsp (5 mL) Baking powder

½ tsp (2.5 mL) Salt

¼ Cup (60 mL) Coconut, unsweetened

1 ¾ Cup (430 mL) Milk or milk alternative (soy, almond or other)

4 Tbsp (60 mL) Maple syrup

1 tsp (5 mL) Vanilla extract

1 Egg

1 Cup (60 mL) Peaches and pears, diced

Extra peach and pear slices for topping

*Canned fruit in water or its own juice work well as well as other frozen or fresh fruit

 Directions

  1. Preheat oven to 350° F and spray a 9x9 or similar baking dish with cooking spray

  2. In a large bowl stir together the oats, cinnamon, baking powder, salt and coconut. In a separate bowl whisk together the milk, maple syrup, egg and vanilla

  3. Pour the wet ingredients in with the dry and stir until combined. Add in the peaches and stir together. Pour the mixture into the prepared baking dish and top with peach slices and little coconut

  4. Bake for 35-45 minutes or until the top is golden and the oatmeal is set. Let it rest for 5 minutes before serving
