Mashed Potatoes and Parsnips

Yield: 4 servings

Ingredients

3 Parsnips, peeled & chopped
2 Potatoes, peeled & chopped
3 Garlic cloves
2 Tbsp (30 mL) Butter
½ tsp (2 mL) Dijon mustard
¼ tsp (1 mL) Salt

 

Directions

  1. In large saucepan of boiling salted water, cook parsnips, potatoes, and garlic until tender, about 15 minutes. Drain and return to pan.

  2. Using potato masher, mash with butter, mustard and salt until smooth.
