Yield: 20 balls
1 1/2 cups/375mL Rolled oats
1/2 cup/125mL Sunbutter (or favourite no-nut butter)
1/2 cup/125mL Pumpkin puree
1/4 cup/60mL Chia seeds
1/4 cup/60mL Honey
1 tsp/5mL Vanilla extract
1/2 tsp/2mL Cinnamon or pumpkin pie spice
1/2 cup/125mL Currants, raisins, dried cranberries, coconut or your favourite addition
- In a medium bowl add 1½ cups oats, sunbutter, pumpkin, chia seeds, honey, vanilla, and cinnamon. Stir to combine well. You want the mixture to be soft but not too sticky. If you pick up a generous spoonful, you should be able to roll it into a ball (it should stick together when rolled but still feel tacky on your hands). Add more oats if too sticky.
- When the mixture is sticky but roll-able, add the currants or other additions and stir to combine. Scoop a large spoonful into your hand and roll into balls. Repeat with remaining dough. Keep these in the fridge for up to a week, or in the freezer for much longer.
