Pumpkin Pie Bites

Yield: 20 balls

Ingredients

1 ½ Cups (375 mL) Rolled oats
½ Cup (125 mL) Sunbutter (or other nut butter)
½ Cup (125 mL) Pumpkin puree
¼ Cup (60 mL) Chia seeds
¼ Cup (60 mL) Honey
1 tsp (5mL) Vanilla extract
½ tsp (2 mL) Cinnamon or pumpkin pie spice
½ Cup (125 mL) Dried fruit or coconut

Directions

  1. Mix all ingredients together.

  2. Refrigerate mixture for 1 hour to allow for a firmer texture.

  3. Roll into bite size balls and refrigerate.
