Tabbouleh

Ingredients

  • ½ cup (125 mL) Fine Bulgur

  • 1 bunch Parsley

  • 10 Mint leaves

  • ½ Small Cucumber

  • 3 Green Onions

  • 2 Small Tomatoes

  • ¼ cup (60 mL) Lemon juice

  • ½ cup (125 mL) Olive oil

  • 1/2 tsp Salt

Directions

  1. Place bulgur in a bowl and cover with just-boiling water. Leave to soak for about 20 minutes.

  2. In the meantime, roughly chop the cucumber, green onions, tomatoes and herbs and add to a large bowl.

  3. Add in lemon juice, olive oil, salt, and cooked bulgur and stir to combine.

  4. Enjoy as a salad or as a dip with pita bread.
