Smashed Cucumber Salad

Ingredients

  • 2 Medium Cucumbers

  • 3 cloves Garlic

  • ½ inch Ginger

  • 2 Tbsp (30mL) Rice vinegar

  • 2 Tbsp (30mL) Soy sauce

  • 2 Tbsp (30mL) Chili sauce

  • ½ Tbsp (7mL) Sugar

  • 2 Tsp (10ml) Sesame oil

  • ¼ tsp Salt

  • Optional: toasted sesame seeds

Directions

  1. Finely chop or grate the ginger and garlic and set aside.

  2. Slice off the ends of the cucumbers and slice them in half, lengthwise.

  3. Place the cucumber halves, cut side down. Using a rolling pin, smash the cucumber until it splits (you can also use the flat part of a knife and your palm). Continue along the length of the cucumber and for each piece.

  4. Chop the cucumbers into 1/2-inch thick slices and add to a bowl with the ginger and garlic. Add in all the other ingredients, toss and enjoy.
