Power Gold Smoothie
Adapted from Strive For Five.
Yield: 8 x 1/2 cup servings
2 cups/500mL Carrots, grated
1/2 cup/125mL Pineapple juice, unsweetened
3/4 cup/175mL Apple juice
3/4 cup/175mL Orange juice
2 tsp/10mL Honey, liquid
1 cup/250mL 2% vanilla yogourt
1/3 cup/75mL Ice cubes
Raisins or dried cranberries (for garnish)
Place the grated carrots in a pot with 1 tbsp. (15 mL) water; stir over low heat until the carrots are soft. This step will result in a smoothie with a smoother consistency; it will also bring out the flavour of the carrots.
Combine the pineapple juice, apple juice, and orange juice in a large bowl. Place the cooked carrots with enough juice to cover in the blender and blend until all the carrots are smooth.
Add to the juice mixture.
Blend the honey, yogourt, and ice cubes in the blender until smooth. Mix with the carrot/juice mixture.
Pour into glasses and top with a few raisins or dried cranberries.
