Marinated Broccoli and Cauliflower Salad

Yield: 8 servings
2 cups/500mL Broccoli
1 cups/250mL Cauliflower
1/2 cup/125mL Carrots, grated
1/3 cup75mL Raisins
1/2 cup/125mL Mayonnaise, light
1/3 cup/60mL Cider vinegar
1/4 cup/50mL White granulated sugar
- Wash the broccoli, cauliflower, and carrots well. Separate the broccoli and cauliflower into bite-sized florets. Grate the carrots. If available, use packaged grated carrots.
- Combine the broccoli, cauliflower, carrots, and raisins in a large bowl.
- In another bowl, combine and whisk together the mayonnaise, cider vinegar, and sugar.
- Pour the salad dressing over the vegetables, cover with plastic wrap, and refrigerate for at least a couple of hours.
