2 pieces Hearty, whole grain bread
1/2 cup/125mL Hummus
6 slices Cucumber
1/2 Avocado        



  1. Spread hummus over bread, top with cucumber.

Tip: Any crunchy vegetable works well in the place of cucumber. Try crispy bean or alfalfa sprouts or thinly sliced peppers.

This sandwich is simple and easy to put together and is also a delicious vegetarian option. Open face, or in portable sandwich style, it’s your choice.
