Crispy Zucchini Sticks
Yield: 4-6 servings
4 Medium zucchini
2 tbsp/30mL Olive oil
2 cloves Garlic, minced
1/2 cup/125mL Shredded parmesan cheese
Ground black pepper, to taste
- Preheat oven to 350 degrees, line cookie sheet with aluminium foil, and spray with cooking spray.
- Wash zucchini, and cut into thick wedges (about 6-8 wedges per zucchini) and place wedges on cookie sheet.
- In a bowl, stir together olive oil and garlic, then brush over wedges.
- Bake for 12-15 minutes.
- Allow the wedges to cool, and enjoy!
Tip: Put aluminium foil on your cookie sheet before laying the zucchini on it to help your sticks get extra toasty!
