Crispy Zucchini Sticks
Yield: 4-6 servings
4 Medium zucchini
2 tbsp/30mL Olive oil
2 cloves Garlic, minced
1/2 cup/125mL Shredded parmesan cheese
Ground black pepper, to taste
Preheat oven to 350 degrees, line cookie sheet with aluminium foil, and spray with cooking spray.
Wash zucchini, and cut into thick wedges (about 6-8 wedges per zucchini) and place wedges on cookie sheet.
In a bowl, stir together olive oil and garlic, then brush over wedges.
Bake for 12-15 minutes.
Allow the wedges to cool, and enjoy!
Tip: Put aluminium foil on your cookie sheet before laying the zucchini on it to help your sticks get extra toasty!
