Cabbage and Turnip Salad
Adapted from BBC Good Food.
Yield: 8 servings
2 cups/500mL Turnip, peeled and grated
1/2 Onion, outer skin removed, chopped finely
1/2 cup/125mL Carrots, grated
3/4 cup/175mL Red or green cabbage, thinly sliced
1 Medium apple, diced
1/2 tsp/2mL Salt
3 tbsp/45mL Canola oil
1 tbsp/45mL White vinegar
1 tbsp/45mL Balsamic vinegar
1 tsp/5mL Honey
1/2 tsp/2mL Celery seeds
Mix the turnip, onion, carrots, cabbage and apple. Sprinkle with salt.
Blend the oil, vinegars, and honey in a blender. Stir in the celery seeds and add pepper to taste.
Immediately pour the dressing onto the prepared vegetables and mix together.
Tip; you can also use rutabaga instead of turnip.
